Double Tomato Mozzarella Bruschetta

I have to thank my friend and fellow foodie, Shushannah, for this recipe. She brought it over to a gathering we had, and because she assembled it at my house, I had the opportunity to get the recipe!

Since I made this video, I also add another ingredient, balsamic vinegar–it makes it THAT much better!

Here it is:

Ingredients
5 Roma tomatoes, diced
1/2 jar sun-dried tomatoes, with oil
Handful of basil, chopped
3 cloves of garlic, fine chopped (add as much as you like)
2 T balsamic vinegar
Salt, Pepper
Baguette (like French bread)
Shredded Mozzarella cheese

1. Combine first six ingredients, and let marinate for several minutes.
2. While the tomato mixture marinates, slice bread into 3/4″ slices and place on lined baking sheet.
3. Spoon tomato mixture on top of bread, and sprinkle desired amount of mozzarella cheese on each.
4. Place in the oven under the broiler until the cheese bubbles.

Hey Sharon,

Could you substitute the baquatte for any type of bread? I would like to try this recipe, its very interesting. I’m a college student on a budget. Thanks and let me know.
